OUR TECHNIQUES

We stick to traditional methods, but with a modern mindset. Temperature control allows for slow, steady fermentations, ensuring quality without the need for harsh additives. To us, real innovation lies in the vision: honoring Lambrusco from the vineyard to the glass.

THE ANCESTRAL (PÉT‑NAT) METHOD

The ancestral method is a traditional way of making sparkling wine. Fermentation starts in the tank and finishes in the bottle, creating natural bubbles and authentic flavors. What makes our wines special is the way we work: hand-harvesting the grapes, cooling them right away, using gentle pressing, and allowing a slow, natural fermentation, without mechanical or chemical filtration.
